Orange-roasted chicken










Orange roasted chicken with chunky sweet potato chips



Garlic, ginger, Chinese five-spice and shallots flavour this chicken well. Delicous served with chunky sweet potato chips.

That's goodtoknow... Avoid dry chicken by buying chicken with the skin. Even if you remove the skin aftwards, it will still make for moister meat and more flavour - Send us your tips




2 oranges, juice and zest 1tsp Chinese five-spice ½ tsp ground ginger 3 cloves garlic, crushed 2 shallots, grated 2tbsp honey 4 x 200g raw chicken breasts, skin removed 4 large sweet poatoes, cut in wedges 2 carrots, sliced 2 parsnips, sliced Low-fat cooking spray



1. Preheat oven to 180° C. Place the orange zest, juice, five-spice, garlic, shallots and honey in a pan over a low heat. Simmer and remove from the heat and cool. 2. Place the chicken breasts on a tray. Pour over the orange mixture and rub into the chicken. 3. Place the potato wedges, parsnips and carrots on a roasting tray and spray with cooking spray. Roast the chicken, potatoes and vegetables in the oven for 30-40 mins until cooked through. Remove from the oven and serve.
